Between about 35°F and 38°F is a good target. That keeps food safely under Florida’s 41°F cold-holding limit with a little room for door openings, without freezing produce.
What temperature should a commercial freezer be?
0°F or colder. Many kitchens run walk-in freezers at -10°F to 0°F.
My thermometer and the unit’s display disagree. Which is right?
Trust a calibrated thermometer placed in the middle of the box, not right by the door or the evaporator. If they’re more than a couple of degrees apart, the sensor or control may need attention.
Why does my cooler read warm right after the lunch rush?
Lots of door openings and warm product going in will push the temperature up for a while. It should recover within an hour or so. If it keeps climbing or never recovers, call us.
